Introducing Seven Colour Sundays, a limited-edition winter brunch series launching on Sunday, 5 July. Driven by the roaring flames of Marble’s signature open fire, this curated experience promises to transform lazy winter afternoons into a vibrant, multi-sensory celebration of local flavour, soulful music, and community.

Inspired by the beloved South African tradition of “7 Colours”—the iconic, vibrant plates that epitomise the warmth and togetherness of Sunday family meals across the country—Marble is casting this cultural touchstone through a lens of contemporary luxury.

“Seven Colour Sundays Brunch is our way of taking a much-loved South African food tradition and expressing it through the Marble lens,” says Chef David Higgs. “It’s about cooking with fire, celebrating bold flavour, and drawing on the incredible produce and sense of place that make the local Cape food culture so deeply special.”

The series offers a lighter, brighter reimagining of these nostalgic comforts, perfectly tailored for long, indulgent afternoons overlooking the harbour. “It’s still the flavours South Africans know and hold dear, but with a fresh energy, a touch of everyday luxury, and our distinct Marble twist,” adds head chef Matt van Niekerk.

In true Timeless Trends fashion, this lifestyle activation beautifully intersects the culinary arts with exceptional design. Marble has partnered with the V&A Waterfront and its creative retail marketplace, The Watershed, to champion and profile local artisans throughout the campaign.

Each Sunday from 5 July to 16 August will be anchored by a distinct colour theme. Guests will not only see these hues come to life through the culinary narrative but will also have the exclusive opportunity to view and purchase bespoke creations from the featured makers on their respective Sundays:

  • 9 August – Purple: Featuring the minimalist leather luxury of Project Dyad

The Culinary Journey

Designed for sharing and celebration, the menu unfolds as a curated progression of comfort and finesse. The afternoon begins with an elegant individual arrival canapé, followed by three shared chef’s snacks that spark the palate.

The centerpiece of the experience is a generous, shared main course accompanied by a selection of seasonal sides—all kissed by the smoke and theatre of Marble’s open coals. For the sweet finale, guests can choose between two beautifully crafted individual desserts, rounded off with a final sweet treat from the pastry team. Dietaries and allergies are, as always, accommodated with utmost care.

To elevate the sense of occasion, every guest will be welcomed with a complimentary glass of crisp Colmant MCC Brut on arrival. Extending the experience beyond the rooftop, each couple will also receive a curated tasting voucher to visit the historic Colmant estate.
