South Africa’s dining scene is set for an extraordinary epicurean journey this September with the launch of Roots of Flavour—an ambitious three-part collaboration series by Marble Hospitality and Air France-KLM.
Designed as a vibrant cultural exchange, the series brings celebrated chefs from Mexico, Panama, and Peru to cook alongside the Marble team across Johannesburg and Cape Town, pairing global foodways with South Africa’s instinctive hospitality.
Chapter One: Mexico Meets Johannesburg & Cape Town
The inaugural chapter opens with Chef Alberto Preciado Navarro, a veteran culinary leader bringing over 25 years of mastery and disciplined Mexican craft to the line-up. Guests will experience once-off dining menus that explore deep regional heritage, bold flavor profiles, and seasonal precision.
- Zioux (Sandton, Johannesburg): Wednesday, 2 September & Thursday, 3 September
- Marble Cape Town: Saturday, 5 September
A Global Conversation at the Local Table
For Marble Hospitality co-founder and chef David Higgs, the collaboration fulfills a long-held ambition to bring the spirit of South America to local shores. “It is an incredibly special opportunity to connect, collaborate, and share with chefs from these extraordinary culinary destinations,” says Higgs.
Supported by Air France-KLM, the series highlights how travel and gastronomy intersect to tell stories of culture and community. “While our network connects travellers to extraordinary culinary destinations around the world, partnerships like these allow us to celebrate those same global flavours here in South Africa through meaningful cultural exchange,” notes Wilson Tauro, Country Manager Southern Africa at Air France-KLM.
